I’ll admit, we don’t often celebrate St. Patrick’s Day in our house.
We have several family birthdays in March and they usually take priority with birthday celebrations and special get togethers. But this year I thought couldn’t hurt to bring some luck of the Irish to our home!
I decided to try a popular St Patty’s Day recipe – corned beef – with a twist! We love sandwiches in our family so I thought it would be fun to make yummy corned beef sliders.
With any fun holiday, I like to decorate the table with decorative place settings and serveware. I found the cutest St Patrick’s Day table decorations from Bed Bath & Beyond.
St Patrick's Day Table Setting Ideas
Before I share my corned beef sliders recipe, I wanted to share my St Patrick’s Day table decorating tips!
When decorating for holidays, you don’t have to go all out with a holiday theme. Sometimes this can come off too kitschy or over the top.
I like to add a few holiday-specific decorations and then use simple colors and textures to layer on top.
For St Patty’s Day decor, I used these cute green and white shamrock table napkins and table runner.
I layered these items on top of a pretty green and white checkered tablecloth.
For the place settings, I used soft mint green plates and bowls and mint green tumblers mixed with gold flatware and glass stemware. The solid color place settings brings an elegant and sophisticated feel to the St Patty’s Day table decor.
The place settings are sitting on top of the linen color placemats that match the sand colored rim of the bowls and plates.
One of my favorite St Patrick’s Day finds is the Belleek painted clover bowls. These delicate clovers are chic and stylish and give a subtle St Patrick’s Day vibe to the table centerpiece.
Crock Pot Corned Beef Recipe
Corned Beef Sliders Ingredients:
4 lbs corned beef brisket, with seasoning packet included
6-8 whole garlic cloves
1 large white onion, cut into wedges
1 yellow bell pepper, cut into slices
1/ 2 cup low sodium beef broth
3 cups water
6 ounces beer
brioche buns
favorite coleslaw (optional)
thousand island dressing (optional)
Corned Beef Slider Recipe Instructions:
In a mixing bowl, mix together beef broth, water and beer, set aside.
Layer onion wedges, yellow bell pepper slices, and 4 whole garlic cloves to bottom of crock pot.
Add corned beef brisket on top. Sprinkle seasoning packet on top of brisket.
Mince 4 cloves of garlic. Slice small openings in corned beef with a knife, and fill with minced garlic.
Fill crock pot with liquid mixture.
Cook in crockpot on low for 8-10 hours.
Take out corned beef brisket and cut in slices, about 1/4 inch thick.
Butter a brioche bun and add 1-2 slices of corned beef.
Add thousand island dressing and coleslaw for a sweet crunchy kick (optional)
